Olivia your chef grew up in a culture rich with food & hospitality.
After college she attended Ballymaloe Cookery School, and has trained internationally working all over the world in Hotels, Restaurants & Yachts.
An avid forager Olivia often musters guests & crew and heads off for afternoons picking wild fruits, herbs & heirloom vegetables.
Onboard Shannon Princess our menus,food and service are a tribute to Ireland’s abundant natural ingredients and Artesian producers.
Olivia is the first to acknowledge what a great privilege
it is, as a chef to continuously use the freshest and highest
quality ingredients sourced on a daily bases.
Prepare to be seduced by only the finest and freshest ingredients, gathered at farm shops and country markets along the Shannon and of course from the sea.
We choose our freerange & organic ingredients from dedicated local producers with a genuine love of food.
Our handmade Farmhouse cheeses are unique to each cheesemaker's farm and their dairy
